Paleo (+dairy) Blue Cheese Meatloaf
What you need:
- 2 lbs ground beef (grass fed preferable)
- Almond meal
- 2 eggs
- 1 carrot
- 1 red onion
- Blue Cheese ( a big hunk)
- 1 can tomato paste (16 ounce)
- Fresh basil
- Salt, peppa
- Garlic Cloves (as many as your heart desires)
Now- I got the bulk of this recipe from my fave book Everyday Paleo. I added the cheese and the carrot and took out some spices.
What to do:
Pre heat oven to 350 degrees.
First- add the meat to a large bowl with 1 cup almond meal, the tomato paste and the eggs.
Next- cut up the onion. Now I have an easy way to chop an onion I want to teach you. Cut off one end and leave the root. Make slices about 1/2 inch apart (or smaller, depending on how small you need the pieces) all the way around the onion stopping in the center. Hold the onion together and cut downwards.
Then BAM you have lots of chopped onion pieces in like half the time. After this chop up the carrot in tiny pieces and some basil and garlic- then cut and crumble the Blue Cheese ( I figured because it said "Cave Aged" on the package that meant it counted as Paleo). Add alllll this yummy stuff to the big bowl.
Now comes the gross part- mix all this stuff together with your hands. Make sure everything is mixed. Then form this into a loaf in a large glass meatloaf pan OR just a large glass pan (that's what I used).
Throw it in the oven and cook for an hour!
