For dinner I made some chicken at it was a really fast and easy recipe. I just rubbed each piece with olive oil, salt, pepper and oregano. Then I took some chopped up garlic and stuffed it under the skin of the chicken. I put it in the oven for about 30-40 minutes at 350 and we enjoyed! My sweet potatoes turned out awful so we won't even talk about it. What this meal needed? MORE VEGGIES.

What you need:

Tuesday I woke up and headed to a meeting. By the time I got home it was 11:30 and I was STARVING so I made some fried eggs and bacon. It was delicious. I started dinner right after breakfast and made what is now our new favorite recipe that I found on Paleo OMG.
Best Pulled Pork Ever
What you need:
-A 2 lb pork loin
-beef broth
-garlic powder
-onion powder
-s & p
I love crock pot recipes. And what I love more than crock pot recipes is crock pot recipes that are so easy I can make them in my sleep. This is one of those and I give Paleo OMG huge props for this gem.
All you do is combine 2 cups beef broth, 1 tablespoon of garlic and onion powder, and salt & pepper to taste in a crock pot with the pork. Let it cook for 8-10 hours on low and pull it apart with a fork when finished. I served this with cauliflower rice, salsa and guacamole. Then Matt told me he was feeling, "kind of over cauliflower". After the initial shock I agreed that yes we have been eating a lot of the best vegetable ever. Guess it is time to mix it up a bit!!

Today I woke up and had a latte with almond milk and a chorizo/spinach omlette from a place called The Perch and it was delicious. Tonight for dinner we will have leftovers and tomorrow will be another trip to Trader Joes!!
Also- I went to CrossFit on Monday and the WOD was some fitness tests (broad jump. triple jump, cone drill) followed by a 5x5 dead lift set trying to get to your heaviest 5 in a row without letting go of the bar. My final set of 5 was with 205lbs and I was pretty pumped since it has been so long!! We are going tonight as well and I will post the WOD tomorrow.
