Monday- Woke up in the morning and had two eggs. Today was finals week and my last week of grad school so it was a busy one! I brought some Laughing Giraffe Snacks and an apple to school. For Lunch I had leftover Lemonade- which was chicken salad and the curry cauliflower. Then after my exams I came home and ate some leftover Paleo Spaghetti. Then Matt and I went to CrossFit and a bunch of us went to Korean BBQ (yes, again). And it was delicious once again.
Tuesday- I woke up Tuesday feeling a little sick- so I had half a laughing giraffe snack. For lunch I tried out my Brian's Bowls order...and let me tell you, it was AWESOME! I had a chicken dish. At first, I will admit, it looked gross frozen. But after throwing it in the microwave for 5 mins it turned out looking really delicious. For a snack I had some plantain chips and Whole Foods guacamole. For dinner on Tuesday I made Matt's favorite Paleo dish- Turkey and Cabbage. Here is the recipe!
What you need:
1 lb turkey
1 bag shredded cabbage
1 onion
Bacon
1 can diced tomatoes
Olive oil
Butter
Honey
Salt/Pepper
Garlic
Cayenne
Oregano
Basil
Red Pepper flakes
Here is what you do- first you use a little olive oil and saute some garlic-then brown your turkey.
I like to add some salt, pepper, oregano, red pepper flakes, basil & cayenne. Then once the turkey is browned add a can of diced tomatoes and stir. Take this mixture and cover it with some foil then stick it in the microwave or oven to keep it warm.Next- get some of that grass fed butter! (by the way if you are doing this challenge to lose weight I would not add the butter or the bacon, although with Paleo you NEED some fat in your diet to make up for the carbs). So grab that butter and cook some bacon! I used about 4 pieces cut in half.
Next- stir all that cabbage with the bacon!! Then take out your turkey and ENJOY! I like to add some BBQ sauce for extra flavor (just find one that is Paleo). I like to serve it by putting the cabbage on bottom then topping it off with some turkey.
Now we are onto Wednesday. Wednesday was my final day of grad school so I cheated a little with some champagne and wine. I had another laughing giraffe snack for breakfast then a large brunch at a place in Malibu called Marmalade Cafe. I had eggs and a sausage patty with slice tomatoes instead of potatoes and toast.
Later that day I had some plantain chips, guacamole and salsa. While everyone else had potato chips and delicious fooooooood. It was tough and I did cheat with the champagne but I have not ATE anything non-Paleo. Wednesday night we went to a place called Big Daddy's with our friends- Natalie and Boggs. We ate cheeseburgers- without the bun or cheese of course, with some sweet potato fries.
And finally to today- Thursday! It was an easy day. I had a handful of nuts for breakfast. Then for lunch I had leftover Turkey Cabbage. And I also had more Turkey Cabbage for a snack before CrossFit- which I better go so I can get ready for! I will post dinner later tonight.
