Now earlier in the blog I have my Paleo Pizza with home made almond flour crust...it is very good and it is strictly paleo- no dairy, no preservatives, 100% homemade..but I did not have the energy to make that tonight so I decided to give this Against the Grain pizza a chance. Let me warn you- it has dairy and is not 100% Paleo but it is grain and gluten free- and pretty darn close.
Not only is it practically Paleo it is also ridiculously easy to make. You just pop it in the oven for 12-15 minutes. I decided to make a salad and add some toppings of my own. Pepperonis, tomatoes and left over crumbled up meatballs over the entire pizza. Then for my side I added some fresh basil- and for Matt's side some mushrooms and olives.
I added the toppings and popped the pizza in the oven at 400 degrees for 15 minutes. I cut up some more mushrooms and tomatoes- then added some carrots, celery and pepperoni to the salad. I finished it off with some Trader Joe's Italian Dressing.
Matt looked over at me after his first bite and said, "Are you sure this is Paleo?" Honestly, I am a pizza lover and I would prefer this pizza to any of the chains.
I can't wait for lunch tomorrow- I have a leftover piece in the fridge that's calling my name!

ReplyDeleteWe got one at Earthfare, with pretty low expectations. It was a cheese and pepperoni and we added tomatoes, onions, green olives. It was FANTASTIC!!!!!!!! I would never have known it was gluten free!!! Fairly (or unfairly!) expensive, but really worth it for a change! I can't tell you how good it is!
